- 1 tbsp olive oil
- 4 cloves garlic, minced
- 1 medium yellow potato, diced
- 1 onion, diced
- 3-4 cups chicken stock
- 1 bunch kale, washed and stemmed
- ⅓ lb shrimp, cleaned, shelled, and cut in half
- ½ dried spicy chorizo sausage, cut into thin disks
- Salt and ground black pepper
- Parsley
- Heat the oil in a pot over medium-high and fry garlic and onions until soft (about 5 min).
- Add the potatoes, a pinch of salt, and fry for another 5 min stirring so that the potatoes don't stick to the bottom.
- Add the stock, bring to a boil, and cover and simmer until potatoes are tender.
- Meanwhile, cut the kale into thin strips.
- Once the potatoes are done, mash them with the back of a wooden spoon.
- Stir in the kale and shrimp and simmer uncovered until both are done (about 3-4 min).
- Add the chorizo and pepper to taste, and adjust salt.
- Garnish with parsley and serve.
